This is our best selling baking extract. What makes for a quality Vanilla Extract? Certainly the most important thing is the quality of the vanilla bean, then the way that the beans are processed. Is this done naturally or by using the less expensive additives and synthetics. The end result is a wide range of quality and price points for vanilla.
You can bet that if the price is low then the quality of the vanilla beans used to make the extract were of lower quality – probably split or dry beans, both of which possess very little natural vanillin, which is the source of vanilla's flavor and aroma. Lower quality extracts will also typically contain filler ingredients like sugar, corn syrup, or propylene glycol. Because of the cost to process a higher grade Vanilla extract you can be assured that these will have a higher quality vanilla beans this will also mean that you are very unlikely to find a top grade vanilla extract to be selling at the lowest prices.
Helpful hint: Vanilla Extract should be stored in a cool, dark place like your pantry or cupboard. This will keep it protected from excessive heat, light or sun which causes the vanilla to break down and lose it potency. You should also be sure not to store it above the stove or oven. And finally Extracts and vanilla beans should not be refrigerated.
