Chili with Beans 2 tablespoons vegetable oil 3 medium onions, chopped 2 cloves garlic, minced 1 bell pepper, chopped 2 lbs ground beef 1 can (28 oz) tomatoes 1 can (6oz) tomato paste 1 can (4 oz) chopped green chilies 2 tablespoons Chili Powder Mild 1 tablespoon Chipotle Powder 1 tablespoon Ground Cumin 1 Bay Leaf 2 teaspoons Sea Salt 6 Whole Cloves 1/4 teaspoon Cayenne Pepper Medium Heat 1 teaspoon brown sugar 2 teaspoons Organic Cocoa Powder 2 cans (15 oz) red kidney beans, drained Directions: 1. Add oil to large Dutch oven and place over medium heat. 2. Sauté onion, garlic and bell pepper until tender stirring occasionally. 3. Add ground beef and cook until browned, breaking up pieces with a spoon. 4. Drain off fat. 5. Add tomatoes thru cocoa powder and simmer, covered, over low heat for about 2 hours stirring occasionally. 6. Add drained beans to pot and cook until just heated through. Yield: about 10 cups Prep time: 2 hours 30 minutes |
