Low Sodium Mediterranean Salmon

What a great meal for a warm Summer evening! Salmon on the grill with a no salt herb marinade is a light and healthy dinner any time. You can easily compliment this meal with some grilled or steamed veggies straight from the garden or Farmer's Market. Salmon is low in calories and saturated fat yet high in protein and essential Omega-3 fatty acids which help reduce cholesterol and blood pressure. A super healthy choice for dinner!


Low Sodium Mediterranean Salmon

Ingredients:

Directions:

  1. Heat grill to high
  2. Combine basil, lemon juice, garlic and parsley in a bowl
  3. Spray fillets with cooking spray
  4. Sprinkle black pepper over fillets
  5. Divide the spices and lemon into four parts and place on fillets
  6. With the fillets herb side down place on high heat grill
  7. Cook for 4 minutes or until the edges turn white
  8. Turn fillets over and place aluminum over the fish
  9. Move fish to a cooler spot and turn down the heat
  10. Cook for 4 minutes or until the thermometer reads 145 F, the fish should be opaque
  11. Sprinkle lemon slices and green olives and serve
