Low Sodium Minestrone This recipe is for cooking in a crock pot 48 ounces low sodium tomato juice 2 cups low sodium vegetable broth 1 chopped zucchini 1/2 cup chopped carrots 1/2 cup chopped celery 1/3 cup Garlic Flakes 1/3 cup Onion Flakes 1 medium potato 1 1/2 cup green beans 1 1/3 cup canned white beans 1 teaspoon Sweet Basil 1 teaspoon Mediterranean Oregano 1 cup spinach Directions: 1. Using a 2.5 quart crock pot, put tomato juice and broth into pot 2. Place all ingredients through oregano into pot 3. Cook 9-10 hours on low 4. When ready to serve add the spinach until it wilts and serve Serves: 6 Prep Time: 30 minutes |
