Low Sodium Minestrone Soup
This is a great crock pot recipe. A whole bunch of healthy comfort food ready when you get home! This is a wonderful vegetarian soup recipe where you will not be missing the meat at all. Prep time for this Minestrone Soup was about 15 minutes to get all the veggies chopped - Super Easy and very healthy. At only 266mg of sodium this is a perfect meal for those on a low sodium diet.
You could serve this soup with some crispy bread or toast for some wonderful crunchiness or as a compliment to a salad. Add a little Parmesean Cheese to each serving for an extra bite of goodness. This soup also reheats nicely for leftovers.

Ingredients:
- 48 ounces low sodium tomato juice or vegetable juice (like V8)
- 2 cups low sodium vegetable broth
- 1 medium zucchini, chopped
- 1/2 cup carrots, chopped
- 1/2 cup celery, chopped
- 3 garlic cloves, diced
- 1/2 medium onion, chopped
- 1 cup dry Orzo
- 1 1/2 cup green beans (we used frozen)
- 1 1/3 cup canned white beans
- 1-3 tsp Sweet Basil
- 1-3 tsp Mediterranean Oregano
- 1 cup spinach
Directions:
- Using a 2.5 quart crock pot, put tomato juice and broth into pot
- Place all ingredients through oregano into pot
- Cook 9-10 hours on low
- When ready to serve add the spinach until it wilts and serve
