Cumin Chicken 

1 chicken (3 lbs)
2 tablespoons
Ground Cumin
1 tablespoon
Ground Black Pepper Coarse Grind
1 tablespoon
Sea Salt
2 tablespoons olive oil
3 tablespoons white wine
1 teaspoon Mexican Oregano


Directions:
1.  Preheat oven to 350°.

2.  Combine cumin thru oregano in a small bowl and mix.
3.  Coat chicken with mixture inside and out.
4.  Push chicken together so that legs and wings are set back.

5.  Place chicken in a shallow dish and set it in the middle of the oven.
6.  Bake for 25 minutes, then lower the temperature to 325° and cook for another 45 minute to 1 hour depending on size.

7.  Remove chicken from oven and let rest 10 minutes before you slice it.
8.  Carve chicken and serve with a side vegetable and rice.
