Green Peppercorn Steak 4 tablespoons Cracked Black Pepper 1/4 teaspoon Ground Jamaican Allspice 1/4 cup chopped Green Peppercorns 3 ounces Olive Oil 6 flank or flat iron steaks 4 oz each Pinch of Sea Salt 1 tablespoon Rosemary Leaf Directions: 1. In a bowl, mix black pepper and allspice and set aside 2. Rub both sides of steaks with olive oil 3. Rub both sides of steaks with chopped green peppercorns 4. Place steaks in a zip lock bag and place in refrigerator for 4 hours 5. Remove steaks from refrigerator, sprinkle salt on all sides and let sit at room temperature for at least 1/2 hour 6. Grill at medium to high temperature until it reaches doneness you prefer 7. Remove from grill and place on warmed platter and let stand for 5-7 minutes 8. Sprinkle steaks with rosemary and serve Serves: 6 Prep Time: 15 minutes |
