Thai Vegetable Stir Fry Cooking Spray 8 ounce package basmati rice 8 sliced green onions 1/2 lb broccoli floret 1/2 lb carrot, thinly sliced 1/2-1 cup Thai peanut sauce 1/2 cup vegetable broth 2 teaspoons cornstarch 1/2 teaspoon Sea Salt 1/4 cup Thai Spice 1/4 cup dry roasted peanuts, chopped Directions: 1. Spray cooking oil on a wok and heat over medium 2. Add carrots, onions, carrots and broccoli and stir fry 5 minutes 3. Add and stir fry peanut sauce 4. In a bowl combine vegetable broth, Thai Spice and cornstarch 5. Pour broth mix into wok and stir fry until boiling point 6. It will thicken as you stir, once it is to desired consistency 7. Serve hot over hot rice and garnish with peanuts Serves: 6 Prep Time: 20 minutes |
