Shredded Coconut Flakes

We're big fans of coconut and are always looking for interesting ways of incorporating this underrated flavor into recipes and spice blends whenever we can. Shredded Coconut has an ideal texture and taste and is preferred coconut of most bakers.
The shredded coconut you find at most supermarkets is sweetened. We know our local grocery store is necessary for most of our groceries but we prefer to get our spices, seasonings and yes coconut flakes other sources. For these types of flavorings you just don't know how long they've been sitting on store shelves (or in grocery store warehouses).
Sweetened coconut has additional sugar added to it prior to the drying process, and the end result is a wetter and sweeter coconut. Some believe that the additional sugar may enhance the flavor of the coconut somewhat, but we believe most baked recipes have enough sugar in them already.
Our preference is unsweetened shredded coconut, as this allows the pure coconut flavor to play the leading role and not be overpowered or masked by the sugar. This lighter, fresher and brighter coconut is ideal for any recipe calling for coconut flakes or shredded coconut - cakes, cookies, cupcakes and pie. We've also used them in homemade granola, trail mixes and straight out of the bag as a healthy snack.
Sprinkle coconut flakes over your breakfast cereal or top your bean dishes, rice dishes, salads, soups or stews. We've also enjoyed them with our fresh berries, fruit salads, ice cream and yogurt. The possibilities are endless.
Each ounce of coconut is about 6 tablespoons.
One of our favorite recipes is our Maharajah Curry Spiced Cashews.
Some of our other favorite baking spices include our Chai Baking Spice Blend and our top grade Vietnamese Cinnamon.
