There are as many recipes for sausages seasonings as there are for barbecue, chicken rubs or curry powders. And just like with these other popular blends the sausage spice flavor combinations are numerous and you get to decide - do you go hot and spicy, sweet and savory or heavy on herbs?

Many of our sausage making customers have their own home kitchen tested sausage blends but this is a good one to get you started if you haven't made one before. We've used this one when mixed with some fresh ground pork placed in a covered dish and then stored in the refrigerator overnight. How much seasoning to use is really a matter of taste. As a general rule of thumb I like to use 2 tablespoons (or about 1 oz) of sausage seasoning per pound of meat.

Then for breakfast I just pan fry it in a heavy cast iron skillet. This goes great with some eggs and hashbrowns and there's nothing like a classic Midwest comfort food breakfast when you're in the mood for a great cheat meal.

Our breakfast sausage seasoning has a dash of heat and lots of delicious herbs. Hand blended from cracked fennel seed, sage, rosemary, marjoram, oregano, crush red pepper, coarse sea salt and coarse black pepper.

If you are looking to experiment and make your own sausage seasoning some of the more popular sausage spices to use are - salt, pepper, white sugar, chile peppers (so many to choose from), sage, oregano, mace, coriander, fennel, garlic, onion, fennel and ginger.

Concocting your own blends is the best part of making your own sausage. Start with some sausage recipes you already enjoy and then you can add or subtract the amounts and spices while you experiment.

Best Breakfast Sausage Mix I think my family's favorite meal is breakfast. They particularly like breakfast sandwiches and sausage patties are a must. We grind our pork and use the breakfast sausage from Spices, Inc, exclusively. It has a wonderful flavor. I will confess that we had an extra scoop to a lb of meat. Also, real good in ground chicken. I would recommend mixing the day before for better results.

Be Careful With This One Great blend for ground pork or turkey. Be sure to blend it well and do as the recommendation suggests, leave it in the fridge over night or longer for the meat to absorb the spices.

I cannot eat garlic, an I cannot eat garlic, an ingredient in most commercial sausages. This breakfast sausage seasoning has been a Godsend. I now buy 2 lbs of ground turkey at a time and make my own breakfast sausage. I use about 1level tablespoon of the seasoning per pound of turkey, and add a bit of fat ( ghee or room temperature butter) to maintain moisture when cooked. I form them into fairly thin patties and freeze them for later use, thawing out only I need in the microwave right before using and then frying them up on the stove until cooked and lightly browned. They are much better tasting and considerably more economical than any of the frozen turkey and chicken breakfast sausages I used to get that were garlic-free. (And I was having a lot of trouble finding those in the store where I shop anyway -- They kept changing brands, replacing them with sausages that had garlic in them.) Now I never run out of breakfast sausage!
