Chili Con Carne
Our salt-free Chili Con Carne chili powder has deep, balanced flavor and resonant color, borne from roasted chile peppers and an invigorating medley of spices and herbs. The savory base of ancho and New Mexico red chiles, fruity and sweet, is deepened by earthy cumin and stabilized by soft bites of garlic and onion. Sweet and peppery allspice and clove brighten up our Chili Con Carne blend, which is given a final lift from minty Mexican oregano and citrusy coriander. This aromatic blend is kid-friendly and mild with minimal chile heat, but it’s full of satisfying flavor. Our Chili Con Carne seasoning blend is salt-free, and blended by hand in small batches in our facility to protect flavor and freshness.
Chili con carne, the old bowl of red, is the granddaddy of all things chili. The origins of chili con carne are shrouded in mystery, with legends linking it to Aztec sacrifice and a mystical blue nun. What seems to be true is that chili con carne originated in Texas in the late 1700s, most likely at the hands of immigrants from the Canary Islands, who settled in the San Antonio region. The spicy blend of meat and peppers became a staple of the American Southwest, popularized Texas vendors who set up chili stands and from the near-folkloric romance of the cowboys on the open range, gathered around a pot of red during long cattle drives. President Lyndon B. Johnson cemented chili con carne’s place in the American pantheon of food by releasing his family’s recipe for Pedernales River Chili—heavy on the beef, and not a bean in sight. It was wildly popular, and less than a decade later chile con carne would be adopted by the Texas legislature as the state dish, where it remains today.
Tips From Our Kitchen
Season the meat in chili con carne before browning with our Chili Con Carne blend to get the flavor going. Add some more about half-way through for a boost. This fragrant seasoning blend is also delicious on black beans and rice, a slow-cooked brisket, short ribs, or gamier meats like venison or goat. Use to season grilled portobello mushrooms. Goes wonderfully with roasted parsnips or carrots. The strong flavors in our Chili Con Carne blend go a long way so apply with a gentle hand until you are comfortable with the level of flavor this blend provides.
