Salt-free and sugar-free, our One Flew Over the Chicken’s Nest delivers terrific flavor and is a great way to enjoy food even on a restrictive diet. Bold garlic steps forward first in this blend, then moves aside just enough for sweet onion and the buttery taste of roasted shallots to kick in. Then black pepper, deep and piney, starts in with its complex burn, complemented by the pleasant bitterness of oregano and the soothing, wood-and-mint flavor of sage. New Mexico chile flakes bring a playful heat and fruitiness to the blend, creating balance, even without the sugar and salt, and the coarse grind of the spices adds a fun, chewy bite to food. We blend our One Flew Over the Chicken’s Nest in our facility in small batches, to protect freshness and make sure we send out the most flavorful product possible.

The sweet and spicy flavor of New Mexico chile flakes gives this blend the push that sends it from good to “I’d like some more, please.” These flakes are from the “Big Jim” variety, a New Mexico varietal released in 1975 that was developed at The Chile Pepper Institute of New Mexico State University. Dr. Roy Nakayama worked in collaboration with James Lytle, the son-in-law of one of the first commercial chile pepper farmers in New Mexico, Joseph Franzoy, to develop a pepper that was large and hearty, with a little bit of heat and a lot of flavor. The Big Jim varietal was a favorite among New Mexicans for decades. It hit a bit of turbulence at the start of the 2000s; the pepper’s heat and flavor had started to falter. It was not consistent, and farmers were considering taking it out of their crop lineups. Then, the folks at the Chile Pepper Institute went into gear. They took reserved seeds and bred new lines, looking for ways to preserve the flavor they wanted, with manageable heat and meaty pepper walls. In 2013 they released the new, improved NuMex Heritage Big Jim peppers, with heat, flavor, and consistency exactly as they wanted it to be.

 

Tips From Our Kitchen

 

One Flew Over the Chicken’s Nest is great for the grill, but you can use it on chicken cooked in any way. Our customers like it on baked chicken, but you can add it to the breading for fried, or air-fryer, chicken. Toss over sliced chicken or steak for fajitas. Perk up jarred tomato sauce with a spoonful of this blend. Use as a seasoning base for tortilla soup or a perky minestrone. This is a great blend for your morning eggs; make a zippy Denver omelet or add to grated potatoes for hash browns. Add this to grated zucchini and make zucchini pancakes. Toss over parsnips and rainbow carrots for a root vegetable roast.

Use one tablespoon of seasoning per pound of meat for an even flavor distribution.

Our One Flew Over the Chicken's Nest Seasoning is hand blended with black pepper, garlic, onion, Hatch Big Jim chile flakes, shallots, oregano, and sage.

One flew over Las Cruces I was happy to discover the Las Cruces blend had not been discontinued. We moved to Las Cruces in 2017. Soon after I discovered Spices Inc online & the Las Cruces blend.
