Pacific Northwest Seafood Seasoning
Brimming with roasted garlic, our Pacific Northwest Seafood Seasoning is fragrant and warm. Garlic comes forward first in this blend, and is quickly followed by sweet onion and the camphoraceous pungency of celery seed. Paprika and black pepper lay down a little resinous depth and cozy radiance, creating a gentle burn that lingers to the end. Herbal dill and parsley add their graceful fragrance and bright, grassy flavors to the blend, elevated by sunny pops of lemon peel. We blend our Pacific Northwest Seafood Seasoning in small batches in our facility, to safeguard freshness and flavor in our products.
The Pacific northwest (PNW), an area of dense rain forests and bold ocean coastlines, mountains, inland deserts, deep rivers and gentle rain, teems with diversity in its region, its wildlife, and the indigenous plants and animals that make up the food supply. We often think of salmon first as the dominant regional fish, but the PNW stretches from southeastern Alaska, along the western seaboard of Canada, and down Washington State and Oregon into northern California. It is home to an enormous wealth of seafood, like halibut, mussels, Dungeness crab, fresh shucked oysters, giant geoducks (a species of very large, edible salt water clams) and succulent sweet spot prawns. Modern chefs celebrate the diversity of this region by combining the cornucopia of regional ingredients with modern cooking techniques for a contemporary take on local cuisine that’s innovative and fresh, with an eye toward sustainability in practice.
Tips From Our Kitchen
Our Pacific Northwest Seafood Seasoning is good on just about anything that comes out of the water. Add to the steaming liquid for mussels for a rich broth. Add to the breading for fried calamari, or mix into crab salad. Toss over shrimp and grill. Or move away from the PNW and use as a base of flavor for Manhattan clam chowder; add a little extra at the end of cooking to boost the flavor. Season risotto ai fruitti di mare, seafood risotto, with Pacific Northwest Seafood Seasoning. This blend is also good rubbed into chicken that’s sautéed with peppers and onions—think cacciatore—and served over pasta. Stir into rice and serve with garlic chicken. Mix with red wine vinegar and oil for a zesty vinaigrette.
