Spiky, vegetal, earthy, and profoundly fragrant, our Prime Rib Rub is a savory seasoning blend with a little bit of sweet interplay. This blend opens with a salt-and-pepper burst that’s followed by the herbal, camphoraceous wave of bay leaf. Sweet, woodsy cinnamon and clove burst in with aromatic, peppery allspice and nutmeg, and then pull back and allow celery seed to impart its savory, pleasant bitterness that fades gracefully away. We blend our Prime Rib Rub in small batches in-house, so we can provide the freshest and most flavorful seasoning blends to our customers.

Cuts of beef can be confusing and often sport similar names. Prime rib, for example, is often butchered into a roast, but a butcher can also carve it into several different steaks. At its most basic, the prime rib steak is cut from the rib primal, the section of beef that runs from the 5th rib to the 12th. This slice of the rib primal, usually still with the bone attached, has been cut with a bandsaw to a specific depth. A caveman steak is a 2-inch cut of prime rib that follows the specific width of the rib bone. A ribeye steak is a boneless trimming of a prime rib steak.


Tips From Our Kitchen


Prime Rib Rub is our version of the popular blend known as Beau Monde Seasoning, which Ernest Hemingway liked to use to mix into his hamburgers. Use this seasoning to press into a steak or roast, and we recommend using 2-3 teaspoons per pound of beef. Let it sit for an hour before cooking. Mix it into a compound butter and use to top steaks. This would be wonderful on baked fish, but it is pungent so use a little less than you would on beef, at first. Toss this over hearty vegetables, like broccoli or large chunks of bell pepper, and roast or grill. Stir into potato salad for unforgettable zip. Dip the rim of a cocktail glass in Prime Rib Rub and enjoy a spectacular Bloody Mary.
