Dusky gold Ground Ajwain seed is fragrant and pungent, a chameleon-like spice that mimics the flavors and characteristics of other spices and herbs, while adding its own little bang. Its fragrance is rich and earthy, reminiscent of cumin and caraway, with a floral thyme-like quality dominating the upper notes. Ground Ajwain releases all the elements of its flavor at first bite, flooding the mouth with the sensation of thyme, herbal oregano, bright and bitter pepper with the slight essence of anise that rides in, before it makes way for a camphor-like burn on the tongue that stays. Ajwain’s pungency comes from its high volatile oil content; the seeds contain 2.5-5% volatile oil. The main component in the oil is thymol, which explains why it bears no small resemblance to thyme’s aroma and flavor. To protect ajwain’s retention of its flavor-giving volatile compounds, we grind our ajwain in-house in small batches. This allows us to send the freshest product possible out to our customers.

Ajwain is a staple in Indian cuisine, and is also popular in Asia, Ethiopia, Iran and Pakistan. It grows best in hot, dry weather and in a variety of soils, though it yields more in loam or clay than it does in sandy soil. Its ability to turn dry lands into productive ones, combined with increasing global demand, makes ajwain an increasingly attractive and lucrative crop. Indian farmers are currently operating at about a 47% return on investment (ROI) for their ajwain crop; most farming generates between 11 and 12% ROI.


Tips From Our Kitchen


Ground Ajwain has a softer edge than the whole seed, but it still delivers an outsized amount of flavor in relation to its size, so use it in small doses until you know your tolerance for it. It goes well with potatoes, so add to potato curries, or in the spice mix for samosas. Sauté with paprika and onions for a lentil dal. It is a wonderful balance to sweet and sour relishes like chutney, and is a great addition to breading for vegetables, like eggplant or broccoli. It’s delicious sprinkled over hummus, and makes a great salty-sweet-spicy cookie. We also have whole Ajwain Seeds available for purchase.
