# Apple Seasoned Bacon Jam

Create a fruity, salty masterpiece with Apple Seasoned Bacon Jam.

This apple-bacon umami bomb with a touch of heat can go everywhere, from burgers and hot dogs to salad toppers or a cheese spread. We find that you get the most flavor by adding the full tablespoon of seasoning to the jam once it’s made, but we also recommend layering in flavor by simmering onions with one teaspoon of Apple Sausage Blend at the beginning of cooking time. You're welcome to add in some chunks of peeled apple for extra apple, just make sure to use one that isn't too sweet. Choose something like Granny Smith; it will sweeten during cooking, and holds its shape better than other apple varieties. We didn’t add any extra salt because both the bacon and the Apple Sausage Blend are already salty, but feel free to add more if your palate demands it!

## Ingredients

1 pound good quality bacon 
1 medium sweet yellow onion, diced 
2 large cloves garlic, minced 
1 teaspoon plus 1 Tablespoon [Apple Sausage Blend](https://spicesinc.com/seasoning-blends/apple-sausage-blend), divided 
1/4 cup apple cider vinegar 
1/2 cup water 
1/4 cup [Granulated Brown Sugar](https://spicesinc.com/baking/granulated-brown-sugar) 
[Medium Grind Black Pepper](https://spicesinc.com/staple-spices/black-pepper-medium-grind) to taste

## Instructions

1. Dice bacon. Put it in a medium-sized pan over medium-high heat. Cook until much of the fat has rendered out and the bacon is crispy, approximately 10-15 minutes.

2. Remove bacon from the pan with a slotted spoon or spider and place in a waiting bowl. Drain out most of the bacon fat, leaving just enough to cook the onions and garlic.

3. Drop the heat to medium. Add onions and garlic to the pan and saute for 3-5 minutes, until onions are soft and garlic is very fragrant.

4. Add 1 teaspoon Apple Sausage Blend and saute for one minute.

5. Add apple cider vinegar, water, and Granulated Brown Sugar to the pan and cook together for about a minute. Then add bacon back to the pan. Drop heat to medium and cook together for 40-50 minutes, or until liquid is syrupy and onions are soft and jammy. This will continue to thicken as it cools, so don’t let it get too dry in the pan. 

6. Stir in remaining Tablespoon of Apple Sausage Seasoning. Taste, and add Medium Grind Black Pepper, if desired. Serve.
