With a strong menthol-and-eucalyptus scent, our Organic Ground Bay Leaves assert themselves right from the start. Their pungent flavor is defined by the camphoraceous flavor that springs out of the exposed surface area of the ground leaf, fading to cool menthol over time with a bitter edge. There’s a light hint of citrus and a gentle touch of mint that pings in at the finish. This herb is meant to be part of an ensemble, delivering deep undertones and light touches to a cast of seasonings in a dish. Our Organic Ground Bay Leaves contain a minimum of 1% volatile oil by weight, though tend to average between 1.5-2% oil, which accounts for its sharp taste.

Contrary to misconceptions, culinary bay leaves are not toxic to consume. Chefs remove whole leaves from dishes at the end of cooking time because 1) if accidentally swallowed, bay leaves can present a choking hazard and 2) never soften during cooking, so they retain their firm and unpleasant texture. Ground bay leaves, reduced to a grainy powder, circumvent both of these problems and are entirely safe to eat. Mountain laurel and cherry laurel, cousins of the bay leaf, bear a close resemblance to this herb and are indeed toxic to both humans and animals, and it’s most likely confusion between these leaves that gave bay its unfortunate reputation.


Tips From Our Kitchen


This is an herb that is better suited to a longer cooking time. Try adding ground bay leaves to a rub for a whole roasting chicken or turkey. It’s a great backdrop for rich, umami flavors, so add some to mushroom risotto or sprinkle over bacon-wrapped scallops. It’s great with soups, stews, and hearty dishes, so add Organic Ground Bay Leaves when making braised onions, a pot roast, or a stewed chicken korma, a type of Indian curry. They pair wonderfully with tomatoes so add to your favorite marinara sauce, or sprinkle over cherry tomatoes and shallots and roast. For extra fun, add a pinch to your bloody Mary at Sunday brunch.


When bay leaves are ground the entire surface area of the leaf is exposed, making it a much more pungent herb than whole bay leaves. Use sparingly, until you understand the flavor profile. The conversion rate is 1/8 to 1/4 teaspoon ground bay leaf equals one whole bay leaf. We do have whole Organic Bay Leaves available as well.

A Little Messy The flavor of this item is fine, but because there was no inner disk to seal the top of the bottle, it was a little messy opening it. There was powder all over the inside of the lid.
