Masala Chai

Warm beverages are a welcome treat when you are sitting inside watching the snow fall and fall and fall. The beauty of this warm spiced chai is the combination of spices that infuse the tea with a flavor and warmth that is very comforting when the weather is cooler, (or downright cold).
Choose loose black tea leaves such as Darjeeling or Ceylon. If you prefer to use a blended tea, Earl Grey would work very well here. Because this drink has milk added, a stronger tea is recommended.
Ingredients:
- 1 cup water
- 2 whole Cardamom Pods
- 1/2 teaspoon Orange Zest
- 1 Ceylon Cinnamon Stick
- 3 whole Tellicherry Peppercorns
- ¼ teaspoon whole Cloves
- 3 teaspoons black tea leaves
- 2 teaspoons honey
- 1 cup 2% or skim milk
- Pinch of Nutmeg
Instructions:
- Smash the Cardamom Pods with the flat end of a knife to open them.
- In a medium saucepan, combine water, Cardamom Pods, Orange Zest, Cinnamon Stick, Cloves and Peppercorns - bring to a boil.
- Remove from heat and add tea leaves and honey, cover pan and let steep for 3-4 minutes (don't let it go longer or the tea will be bitter).
- Add milk to the tea mixture and bring back to a boil.
- As soon as the mixture starts to boil, remove from heat and strain out spices, pouring tea into cups.
- Garnish with Nutmeg and serve hot.
Makes 2 servings.
