Ground Cardamom
There's nothing subtle about the taste of Ground Cardamom. Its complex flavor is sweet and warm, piney with bursts of pepper-ginger-spice, and finishes with notes of lemon and orange that elevate the aromatic sensations. The citrusy aroma is full with zesty fruit, but it has an woody backbone speckled with pepper. It is at minimum 2% volatile oil by weight, also a complex mix of more than twenty compounds, which helps explain its hard-to-pin-down flavor profile. Our Ground Cardamom is ground in-house in small batches to help protect against the loss of volatile oils, which provides our customers with the best-tasting spice possible.
Many of us are familiar with cardamom being used in both sweet and savory applications, but there is also a strong Arabic tradition of brewing coffee with cardamom. Cardamom is ground with coffee beans into a pot called a dallah and boiled; the first service goes to the guest with the highest social standing, and it has long been seen as a gesture of friendship and goodwill. Some dallahs are designed with a chamber in the bottom of the pot to hold cardamom pods. The earliest evidence of the Arabic coffee tradition that dates back to 15th-century Yemen, but over the centuries the practice has become so culturally significant that in 2015 UNESCO inscribed it to the Representative List of the Intangible Cultural Heritage of Humanity.
Tips From Our Kitchen
Spice cake gets an exotic edge from the addition of Ground Cardamom, and you could add some to snickerdoodles, French toast, or rice pudding for a new take on some old classics. Stir into tomatoes and chickpeas and roast for a savory tagine, or add to a marinade for lamb chops with garlic and pepper, and grill. Braise pears in cardamom syrup, or act like a Swede and add cardamom to your meatballs. We also carry whole Cardamom Pods. Add gradually; cardamom has a lot of flavor and can overwhelm a dish fairly easily.
One teaspoon of Ground Cardamom is roughly equal to ten Cardamom Pods.
Our Ground Cardamom comes from either Guatemala or Honduras, depending on availability.
