This powder measures between 1,000-2,500 Scoville Heat Units; it is a mild, pleasant heat that cuts across the depth of the pepper’s flavor, blooms on the tongue, and then lingers.
Our Organic New Mexico Red Chile Powder is ground from chiles grown on a fourth-generation family farm that has been in operation since the early 1900s, in the famed Hatch region of New Mexico. Chile peppers from the Hatch region are renowned for their unique flavor, products of the area’s terroir—the hot days, cool nights, and rich, loamy soil of which the area’s farmland is comprised. Fifty years ago with the launch of the annual Chile Pepper Festival, Hatch, New Mexico declared itself the Chile Pepper Capital of the World, and they may have the right to the title. Chile peppers became a cultural institution about a hundred years ago when agribusiness farming began in earnest, and have been cultivated in that region for nearly 500 years.
