Our no-salt Vegetable Stock Powder combines all the great flavors of long-simmering stock into one versatile seasoning blend that tastes as good as it smells. This umami-laden blend announces itself with its fragrance, bracing and bold with celery seed, bolstered by the nutty aroma of nutritional yeast. At first taste, you’re greeted by the parmesan-like depth of the nutritional yeast and the grounding earthiness of turmeric, which are given lift by aromatic onion and garlic. Fragrant Mediterranean herbs like oregano and marjoram lend their herbaceous peppery mint, while woodsy sage and pine-floral rosemary cover the middle ground and create a solid base of flavors. Parsley, thyme, and sweet basil come in at the end and add a sweet lift to this blend’s savory, verdant flavors. Our Vegetable Stock Powder is blended by hand in small batches in our facility, to ensure each bottle contains the freshest product possible.
Nutritional yeast, often affectionately called “nooch”, is an inert form of saccharomyces cerevisiae, a type of yeast that’s also used to produce bread and beer. Active yeast, contained in fermenting chambers, is allowed to mature, before being then toasted and pasteurized. The drying process causes naturally-occurring proteins in the yeast convert to its component amino acids, and the release of aminos creates the deeply satisfying cheesy-nutty-savory umami backbone for which nutritional yeast is known. Nutritional yeast’s strong flavor profile that’s salt-, MSG-, fat-, gluten-, and animal-free has made it a favorite of the health food set since 1975, when it was showcased in a popular vegetarian cookbook at the time. It has grown in popularity over the years, gaining increased acceptance among flexitarians and meat-eaters looking to healthy-up their plates and expand their palates.
Tips From Our Kitchen
To make vegetable stock, add 1 Tablespoon of Vegetable Stock Powder per cup of water. This versatile blend can be sprinkled over buttered vegetables like green beans, or added to aromatics to roast; toss leeks with Vegetable Stock Powder and olive oil and put that in the oven. Sprinkle over pizza dough before adding sauce and toppings. This would be a rich and flavorful addition to breading for pork chops or chicken, or oven- or air-fried fish. Mix with mashed cauliflower and you may never want mashed potatoes again.
