Cracked Black Pepper
The first thing you experience when you use Cracked Black Pepper is that warm rush of heat that hits at the back of the throat and travels from nose to mid-chest. Fueled by piperine, a pungent chemical compound found throughout the body and exterior of a peppercorn, Cracked Black Pepper is rich with piney, earthy heat. The aroma, spicy and citrusy with floral hints around the edges, is driven by a combination of piperine and a volatile oil content of approximately 1-2.5% by weight. Our Cracked Black Pepper is ground in-house from whole Black Peppercorns at a larger grind of 10 to 16 mesh. The volatile oil content is protected in a larger grind like this, because it gives the volatile oils more space to adhere to and prevents dissipation, which would cause your pepper to lose flavor. We grind our Cracked Black Pepper frequently in small batches to provide our customers with the freshest and most flavorful product possible.
Black pepper is a dried berry that grows in clusters on a flowering vine. The pepper berry is a drupe, which is the classification for fruits with thin skins that surround a central seed; peaches and cherries are also drupes. Vines are wrapped around poles and encouraged to climb, and may grow to be 25 feet tall. The berries are picked while green and unripe and then dried in the sun. Sun drying initiates a chemical process that wrinkles the berries and turns them from green to their familiar black, and from there they are packaged for global distribution.
Tips From Our Kitchen
Add peppery crunch to Caesar salad with the large grind of our Cracked Black Pepper. Toss chicken wings in garlicky oil and Cracked Black Pepper and bake, for a fabulous take on peppery wings. Add to breading and turn popcorn shrimp into fireworks of flavor. Add to pasta tossed in a simple tomato sauce, and for extra bang add the pepper at the end of cooking so it doesn’t mellow in the heat. Steep in cream for spicy-cold ice cream, and mix more Cracked Black Pepper in as the ice cream is finishing for extra heat and flavor.
