Balsamic and Honey Salmon

In our ongoing efforts to add fish to our weekly meal plans we tend to have an ongoing battle between Greg and myself. He prefers Tilapia while I prefer Salmon. Every once in a while he gives in.
This dinner took about 10 minutes from start to table - honestly! That''s faster than running through the local fast food place. Now the only thing that was better than this be a ridiculously quick and easy meal to prepare was that it was sooooo good! There was something almost magical about the way that the honey and balsamic vinegar partnered together... it was a bit sweet, tart and syrupy all at once.
You can remove the skin before cooking - but I find it easier to sear the fillet, skin down, then when you flip it to the fish side you can remove the skin easily. You can cut it off with knife before cooking - but it is slippery and hard to cut and you wind up taking part of the fish with the skin. Either way, remove the skin.
Ingredients:
- 2 5oz Salmon fillets
- cracked pepper
- Smoky Citrus Salt
- 1/4 cup balsamic vinegar
- 2 TBS honey
- 2 tsp olive oil
Instructions:
- Lightly season the fillets with the cracked pepper and citrus salt.
- Heat a skillet with olive oil to med heat and add fillets cooking on each side about 2-3 minutes until done.
- In a small bowl, whisk together balsamic vinegar and honey.
- Pour vinegar/honey over salmon and let cook about 2 more minutes
Makes 2 servings.
