Spinach Rice

Spinach Rice is a great way to add something a little different and healthy to your regular rice side dish. We keep cooked rice on hand so this side comes together in about 5 minutes. We've used brown rice and basmati and both work well with this recipe. If fresh cilantro is not readily available, you can also used dried cilantro.
We used this as a healthy side dish for a Almond Crusted Tilapia dish and it was the perfect compliment. This spinach rice is low in saturated fat while being packed with healthy nutrients.
Ingredients:
- Tear about 1 cup of fresh spinach leaves
- Add 2 or 3 sprigs of fresh cilantro
- Add 1/2 cup veggie or chicken broth
- Ground peppercorns to taste
Instructions:
In a food processor:
- Tear about 1 cup of fresh spinach leaves
- Add 2 or 3 sprigs of fresh cilantro
- Add 1/2 cup veggie or chicken broth
- Ground peppercorns to taste
- Blend until smooth
Put 1 cup cooked rice in a small saucepan over med heat
Add 1/4 cup chopped yellow onion
Add spinach mixture
Heat thoroughly
Makes 2 servings.
