Savory Brazilian Pizza

In doing research for pizza toppings, our test kitchen team decided to prepare this savory Brazilian style pizza. Pizza has a long history and was introduced to Brazil in the late 1800s by Italian immigrants who combined their love of pizza with locally available ingredients as toppings. Specifically, Sao Paulo is known for it's pizza, incorporating not only savory toppings but sweet as well using banana, chocolate and guava for their very popular dessert pizzas.
One difference between the Brazilian pizza and Italian or American pizza is that the Brazilian pizza has little or no tomato sauce on it. We decided to use a Chimichurri sauce as the base for our pizza. We also used our Whole Wheat Dough recipe and cut back on the cheese to make it a more healthy meal option.
Making pizza at home is almost always a healthier alternative to store bought or delivery pizza. Not only can you be in control of what goes into the dough and sauce, you can also add extra veggies or other topping to make it a complete meal.
The staff was a little apprehensive about boiled eggs as a pizza topping, but they were all thumbs up after tasting it!
Ingredients:
- 1 whole wheat pizza dough - homemade
- 1/2 cup Chimichurri sauce - homemade
- 1 cup reduced fat mozzarella cheese
- 1 tablespoon Tempero Baiano Seasoning
- 1/2 lb slow cooked ham, thinly sliced
- 1 medium red onion, thinly sliced
- 2 hard boiled eggs
- 1 cup kalamata black olives, pitted and cut in halves
- 1 tablespoon olive oil
Instructions:
- Heat oven to 400 degrees
- On a lightly floured work surface, roll dough out to about a 12" circle
- Transfer the dough on a pizza peel, pizza stone or pan
- Spread the chimichurri sauce on the dough leaving about 1 inch from the edge for the crust
- In a small bowl, combine the cheese and Tempero Baiano Seasoning
- Top the pizza with the ham, onion, eggs, olives and cheese mixture
- Drizzle top of pizza with the olive oil
- Bake for 10-12 minutes until the dough is cooked and slightly crisp on the bottom and the cheese is melted.
- Serve immediately.
