Tomato Powder
This beautiful scarlet-red Tomato Powder is made from summer-ripened sweet tomatoes. Like the field ripe tomatoes it’s made from, our Tomato Powder is a fragrant blend of sweet and tart. Thanks to the dehydration process the flavors in the tomatoes concentrate, giving this powder a potent burst of vegetal tomato sweetness. Other tomato powders can clump if they’re not properly dehydrated or if they’re stored in a humid environment, which can make them impossible to work with. Our Tomato Powder has a small amount of anti-caking agent in it, but we've found that it provides the best cooking experience. Our product won't clump on you, and there's no effect on flavor or color.
Using dried tomatoes in their myriad forms feels like a relatively new technique in the US, something that didn’t gain popularity until the 1980s, but people have been drying tomatoes for centuries. The Aztecs were sun-drying tomato crops to preserve them as far back as 700CE. In 19th century Italy, people preferred dried tomatoes that were then packed in glass jars, or powdered, because cans brought with them concerns over lead poisoning. Tomato Powder carries none of those concerns, and has a long shelf life. Do you want a taste of summer during cold winter nights? Do what the Aztecs did, and get some powdered tomatoes.
Tips From Our Kitchen
It's easy to transform this beautiful scarlet powder into a sweet paste or sauce in a matter of minutes. Use it in a 1:1 ratio for paste (1 tablespoon of water to 1 tablespoon of powder), and a 2:1 ratio for tomato sauce. Mix in with your meatloaf, or make an herb cream cheese with Tomato Powder, chives, and fresh parsley. Perk up your homemade pizza by adding this to (or instead of!) the sauce, and make this your secret ingredient in marinades and rubs. Mix this into bread dough to give it a savory boost, and top your toasted tomato bread with Tomato Powder-flecked compound butter. This powder blends well with liquids and fats and assimilates into rubs. If you’re looking for tomato flavor with a little texture, we recommend Tomato Flakes. While we store this just like any other spice in a cool, dark spice cabinet (away from direct sunlight and the heat of the stove) some of our customers prefer to store it in the refrigerator.
