Organic Chipotle Flakes, *Capsicum annuum*, are hot chile flakes. They are also referred to as organic chipotle pepper flakes, organic smoky chipotle chili flakes, or organic chipotle chile flakes.

Chipotles chiles are made from jalapeno peppers that are fully ripened and smoked. Most jalapenos are picked while green but some are left to ripen to maturity on the vine. They are thick-walled chiles so once they are picked they are often smoked. Smoking preserves them more successfully than simply drying them, since the thicker walls take longer to dry and are more susceptible to microbial incursion.
