This light and tasty Arugula Walnut Salad is perfect when the weather is warm. Quick and easy to put together, this salad has a tanginess from the vinegar and is offset by the sweetness of raisins. Pair this healthy soup with a tall glass of iced tea and you have the perfect Summer lunch.

Arugula Salad recipe is low in sodium and cholesterol while being a good source of maganese and vitamin K.

Ingredients:
  • 4 cups fresh chopped arugula
  • 1 tablespoon walnut oil
  • 2 ounces coarsely chopped walnuts
  • 1 cup sliced mushrooms
  • 1 or 2 fresh tomatoes, sliced into wedges
  • 1 tablespoon balsamic vinegar
  • 1/4 cup raisins
  • 1/8 teaspoon Ground Black Pepper Medium Grind
  • 1/8 teaspoon Sea Salt
Instructions:
  1. In a large bowl mix the walnuts, mushrooms, tomatoes and arugula
  2. In a small bowl mix the oil, pepper, salt, raisins and vinegar
  3. Pour dressing over salad
