Arugula Walnut Salad
This light and tasty Arugula Walnut Salad is perfect when the weather is warm. Quick and easy to put together, this salad has a tanginess from the vinegar and is offset by the sweetness of raisins. Pair this healthy soup with a tall glass of iced tea and you have the perfect Summer lunch.

Ingredients:
- 4 cups fresh chopped arugula
- 1 tablespoon walnut oil
- 2 ounces coarsely chopped walnuts
- 1 cup sliced mushrooms
- 1 or 2 fresh tomatoes, sliced into wedges
- 1 tablespoon balsamic vinegar
- 1/4 cup raisins
- 1/8 teaspoon Ground Black Pepper Medium Grind
- 1/8 teaspoon Sea Salt
Instructions:
- In a large bowl mix the walnuts, mushrooms, tomatoes and arugula
- In a small bowl mix the oil, pepper, salt, raisins and vinegar
- Pour dressing over salad
