This peach salsa recipe is great if you have some very ripe peaches around, this salsa is an especially good compliment for grilled sausage or pork chops but we've also paired it with grilled fish and chicken. The ginger adds a little unexpected flavor and sweetness while the heat of the red pepper flakes provide a kick. Plan to make this fruit salsa recipe early in the day or the day before for best flavor.

You could substitute mint, parsley or cilantro for the basil. If you use fresh ginger, grate it and add about 1/2 tsp sugar to provide the sweetness.

Oh and if you just want to eat this directly out of the bowl with a spoon we won't tell anybody!

  • 3 to 4 ripe peaches, pitted and chopped
  • 1/2 red or green bell pepper seeded and chopped
  • 1/2 sweet onion, chopped
  • 4 or 5 pieces Crystallized Ginger, minced
  • 1/3 to 1/2 cup fresh basil, chopped
  • 2 tablespoon lemon juice
  • 1 teaspoon Crushed Red Pepper
  • Ground Pepper to taste
  1. Combine all ingredients in a bowl.
  2. Cover and chill in refrigerator for up to 1/2 hour to allow all the flavors to combine.
  3. Serve with chips, tortillas, tacos, burritos, tostadas, quesadillas, pinto or black beans.
