Quick Thai Chicken

I really like one of our classic spice blends called Spicy Thai Seasoning and have been looking for every chance that I can get to use it. This gives some great flavor and a bit of heat (and well I love the heat in just about any dish). A couple of months ago Penny got us a new rice cooker and we make sure that this gets plenty of use. I like to keep some cooked long grain brown rice on hand for quick and easy meals like this one.

I also like to keep some chicken cooked up for the same reason and with it being the dead of winter the Foreman Grill has been getting some heavy use until we can get back outside again. One other tip, when I know that I am going to cook chicken up for this meal I season the chicken prior to cooking on the Foreman with the Thai Seasoning so that it has a consistent taste. There is nothing worse than having a completely different taste to the chicken.

This recipe takes about 10-15 minutes to put together.

  • 2 Tsp Olive Oil
  • 1 Cup Chopped Onion
  • 1 Cup Chopped Red Bell Pepper
  • 2 Large Omega 3 Eggs
  • 2 Tbsp Spicy Thai Seasoning
  • 1 Tbsp Lite (or reduced sodium) Soy Sauce
  • 1 Cups Cooked Long Grain Brown Rice
  • 1 Cup Diced Roasted Chicken
  1. Add the olive oil to the pan and heat on medium high for a minute or so
  2. Turn the heat down to medium and add the chopped onion and bell pepper and sauté for 2-4 minutes or until soft
  3. Add the egg and cook until egg is no longer runny (about 2 minutes)
  4. Turn the heat down to low and add the rice, chicken and Thai Seasoning and warm for 1-2 minutes
  5. Add the soy sauce and stir in evenly
  6. Serve.
