Quick Thai Chicken
This is a great recipe to have on hand for refrigerator clean-outs. This recipe is essentially a Thai-inspired fried rice, and uses pre-cooked chicken and pre-cooked rice. All you need to do it saute some vegetables and firm up some eggs and voila! Dinner is served.
While this recipe was written as a serving for two, it can be easily batched up and made into dinner for four, or even more if you have a large enough pan and copious leftovers. You can finish this dish with an extra shake of Spicy Thai Seasoning, or sprinkle with freshly-chopped scallions, cilantro, and peanuts.

Ingredients:
- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 cup chopped red bell pepper
- 2 large eggs
- 2 Tablespoons Spicy Thai Seasoning
- 1 cup cooked long grain brown rice
- 1 cup diced roasted chicken
- 1 Tablespoon soy sauce
Instructions:
- Add the olive oil to the pan and heat over medium heat.
- Add the chopped onion and bell pepper and sauté for 2-4 minutes or until soft.
- Turn the heat to medium-low and add the rice, chicken and Spicy Thai Seasoning. Stir to combine thoroughly and cook until warmed through, 1-2 minutes.
- Whisk eggs in a small bowl. Drizzle them in so they create thin ribbons among the rice. Cook until eggs are no longer runny, about 2 minutes.
- Add the soy sauce and stir until distributed evenly.
- Serve.
