Love these for Peruvian Chicken
I bought these and the Aji Panca to bring a more authentic dimension to my Peruvian Chicken recipe, and did these chiles deliver! Aji Amarillo are a lovely, sweet, fruity milder chiles. Their yellow sunny color is a good indication of their sunny flavor.

My favorite lower medium heat chili!
Nothing else like them. Bright multi-faceted fruity flavors. Beyond accurate description. One of the few dried chilies that retains some crunchy texture when rehydrated. Should try to grow some to try fresh.

Chile Time
Dried chiles arrived well packaged and much faster than I expected. The peppers were still pliable and had excellent flavor and not as hot as the description makes them sound but that was fine by me. I also received a free sample of Pennsylvania Pepper. I’ve order other items since and have been equally impressed.

Aji Amarillo Chile
Hard to find. I used it re-hydrated and chopped in a stew with beef and white beans. Medium heat. If you want more heat, add more chiles or a liberal sprinkling of powdered aji amarillo.
