Perfect for Peruvian chicken
For a long time I wanted to re-create the best Peruvian chicken I had ever had, but one of the important ingredients was the Aji Amarillo that was not to be found in my current spice shop. This is the ticket. Not just for the chicken but also for the ceviche that I make for a light summer dish. The aji is fruity and light, mildly hot.

Great for Latin American soups with a kick.
Perfectly hot/spicy, smells wonderful and the flavor is delicious. It is also yellow not red as the name describes it and so I use it as a replacement for saffrom with a kick, which makes my chicken soup delicious.

Aji Amarillo Chile Powder
All I can say is it's great stuff. I use not only in Mexican dishes but in my Omelet Mixes Pasta Sauces and in my Chicken and Steak Rubs. I highly recommend Aji Amarillo Chile Powder, especially if you like Chile Powders for your cooking.
