Nice spicy smokiness
It's a different animal from the green ones... spicy smokiness that packs a learning curve for the taste buds. That said, adds a nice flavor to tomato-based soups, stews and, especially, the veggie/chicken stocks! I did not care for the outcome of its use in foods for which the green pods are normally used.

The smell is fantabulous! Even if never use, just to open jar and smell. Have used tho' .. opening pods and using mortar/pestle to crush. Gives a unique and delightful aroma to many dishes ... even cookies!
