Perfect for Peruvian chicken
For a long time I wanted to re-create the best Peruvian chicken I had ever had, but one of the important ingredients was the Aji Amarillo that was not to be found in my current spice shop. This is the ticket. Not just for the chicken but also for the ceviche that I make for a light summer dish. The aji is fruity and light, mildly hot.
