Amazing flavor from this pepper! Granted there is probably variability from batch to batch. I ordered both Ancho and Mulato.....the Mulato has quite a peppery bite compared to the Anchos. Not HOT mind you, but enough bite that a delicate palate will whine. Also has a delicate almost chocolate undertone...simply wonderful and complex flavor!

Supple, leather like not dried and crunchy as you typically find in markets, even Latin markets. And the flavor...my goodness, yum! I just used these, ancho and pasilla chiles to make a from scratch mole...Divine! Even the packaging is great. I wimmediTely tossed out my other dried chiles and now will only buy from spices inc. and I will tell all of my friends. Fabulous product!

Olé Mole!
If you're adventurous (or foolish) to try mole sauce, you can't beat these mulato chiles, and also great for enchilada sauce. Deep chile flavor with just a bit of heat. The texture is pliable, and if you give them a quick toast in a dry skillet it really brings out the flavor and aroma. I do a lot of my own spice blends and this really adds a richness all its own.

Mulato chiles were hard and brittle and almost impossible to pull apart.
Mulato chiles were hard and brittle and almost impossible to pull apart. The pasillas I ordered in different order were perfect and pliable. In the end, the mole came out perfectly but it was a lot of work!!
