One of my all-time favorite dishes is Panang Curry, which, like so many marvelous southeast Asian dishes, is quite simple to prepare--provided you can track down various exotic ingrediants. Planning a two hour trip to my international farmers market is my one and only means of procuring Kaffir Lime leaves: an ingredient with no acceptable substitute and which adds a uniquely bright, citrus/lime-like flavor. Of course I can only buy a package with scores of leaves (for a modest price), but I have yet to find any means of preserving/storing them--effectively wasting the majority of every package (freezing produces an especially unpleasant product). While I know that ground Kaffir Lime leaves are a less-than-perfect solution to having fresh leaves on hand, the unquestionable freshness of your products makes the logistics of preparing southeastern Asian cuisine so much more pleasant and efficient. Thank you
