Just made a batch of adobo sauce for a barbacoa chicken attempt. The dried pasillas were mostly supple. One was a bit drier than the rest. Seemed to rehydrate just fine. I don't know anything about dried chilis, just getting into Mexican cooking, as there are no decent Mexican restaurants where I live in Nova Scotia so take the review for what it's worth. Web site is very well laid out and informative. The peppers I bought seem to be of excellent quality. Looking forward to new culinary adventures.
