In order of strength: roasty like black coffee, smoky, heat, raisin. All fresh, concentrated, and with a punch. Definitely useful in SW dishes, especially sauces and gravy, but easy to overdo.

Just enough smoke. My favorite use is in creamy salad dressing (mayonnaise, yogurt and sour creme with the chipotle powder)
