This seasoning and cubed chuck roast is about all you'll need to make Texas Red
I was making this seasoning blend from scratch, for years. Then I bought Spice Inc's version. It is almost perfect! ;) I use more unsweetened cocoa and Mexican oregano or epazote, and lots more fresh garlic but 7 contractors (don't ask!) loved it. And yes, the recommended amount is perfect - "generally recommend about ¾ cup of 8 Pepper Chili Seasoning per 2-1/2 to 3 lbs of meat". I used 1.5 cups for 6 pounds of meat. I know you're going to think that's too much, but it's not.

This is as good as it gets for good tasting Chili!
I have looked at and tried a lot of different "Championship" chili recipes and this seasoning saves so much time and hassle compared to buying and measuring out all of the various spices and herbs that most of the really good recipes call for. Highly recommended.
