Elevating the Spice/Flavor Level
Now I employ expanding the flavor of a dish as well as it's heat by holding the cumin amount static and by holding the amount of cayenne constant as well, but switching to the hotter cayenne. To me, much flavor can also be added by using more "meca." to a more traditional Latin dish. A greater cumulative affect is gained when used together than if each is used separately, It may be that there is a synergy where something is greater than ithe sum of its parts.
I would be interested in knowing if anyone can validate what I believe I've found. I'm surely no expert, so if you like-- criticize the flaws.
