I am in the process of converting several hot sauce recipes to powder formulations. One of the sauces is a Caribbean style Scotch Bonnet, Mango and Mustard sauce. The amchur was a very good substitute for the mango, but it was a bit lumpy and had to be pre-sieved before use. Additionally, it was not too sweet, so some granulated honey made up the balance for the sweetness. I will definately be using it again.
