I should not have messed around with this already really good rub, but I did today. I added ground ginger, cinnamon, and turmeric to chicken thighs (bone-in, skin-on) and rubbed them down refrigerating about 4 hours. Then I cooked them in a tajine. Temperature began at 325 for 25 minutes and then increased to 350 for about another 25 minutes. I let it rest and then served with rice and sauteed green beans and onions. I could open a food truck with this dish, it was that good.

We also mixed it in with some coffee and cocoa for a beef tenderloin and the smoky sweet balance was perfection.
