For some time, we've sought a source of affordable dried citrus zests for our powder blends created from our family recipes. One never quite knows what they are going to get when ordering "blind", as we've tried others before and found much of the inner rind was included. Yet, still willing to "try once more", we took a chance, based on Spices Inc. description of taking only the zest surface.
After using this particular dehydrated Florida Lemon Peel, we were impressed with the lack of inner peel, strength of flavor, and robustness it gives to our specific recipes. The strength has allowed us to reduce the amount needed, compared to past "experiments", and that has helped reduce our cost of production as well.
We look forward to obtaining more of your quality lemon peel zest in the very near future, when it is available. Hint to others: Get more than you need next time, as the demand for this nice zest does create temporary "empty shelves". LOL!
