Great start for delicious sausage
Like other reviewers, I would have to admit this seasoning blend is by far not perfect, but it's really a great start. I have made about 40 pounds of sausage since I bought it and here's what I think...
Overall, a good start. I did not expect it to taste as good as it did on my first batch, so initially I was impressed. But I had to add to it and increase the quantity. It was missing the classic fennel flavoring. So I toasted up a generous handful of fennel seeds and broke it up in my mortar. That helped a lot with a short handful of crushed red pepper.
Next batch, I did the same but threw in a healthy handful of fresh ground black pepper.
This past weekend I went all out and threw in some nice Italian imported tomatoes, fresh basil from my garden, fresh garlic, and a heaping handful of three cheeses direct from Italy. That was the ticket.
My test patties before stuffing started off with one and turned into four last night. It was REALLY good.
While this seasoning blend may not initially suit everyone, it was a great starting point for me and I like it and will reorder it. It's a great helper start off that you can tweak according to your liking.
End review: use it as a base and tweak according to your liking and I feel you will be happy.
