Dried Shallots Unfortunately I don't always have fresh ones to use. These are perfect. You just need to remember not to use as many since they are much stronger.

Dried Shallots I cannot eat onions anymore, but I use these combined with the toated onion powder and produce "onions." I *can* eat onion powder. I bulk buy these shallots in the 5lb portion and store in an old nutritional yeast flakes pail. I refill my kitchen container from the pail. As I use these the way others use onions, I go through 5lb in not too very long (like 4-5 months). I plan to keep on buying these as long as Spice Inc wants to keep on selling them to me. :-)

Dried Shallots And is especially useful when pressed for time. I find that rehydrating in a few TBS warm water for about 10 min releases the maximum bouquet.

Dried Shallots Egg omelets, tuna fish sandwich, chicken liver pate, etc.. I always find uses for them. Fresh shallots purchased in local stores when you find them are expense and generally not the best quality due to age and storage. This time is the third time I ordered. Because they get used in a lot of ways I ended up ordering a 5lb bag this time. Vacuum packed them in .5 lb bags. For use in the kitchen always have a pint jar handy.
