Just made a batch of
Just made a batch of adobo sauce for a barbacoa chicken attempt. The dried pasillas were mostly supple. One was a bit drier than the rest. Seemed to rehydrate just fine. I don't know anything about dried chilis, just getting into Mexican cooking, as there are no decent Mexican restaurants where I live in Nova Scotia so take the review for what it's worth. Web site is very well laid out and informative. The peppers I bought seem to be of excellent quality. Looking forward to new culinary adventures.

Normally when I use these
Normally when I use these types of Chili’s I can split them, remove the seeds, and give them a slight toasting before rehydrating. These chiles were so dried out that when I tried to cut them they virtually turned to dust.
