I first learned about Pasilla I first learned about Pasilla de Oaxaca chiles in a cooking class in the city of Oaxaca. I brought part of a kilo back home and used them, primarily, in soup and stews.Delicious, but I ran out and none of the local Mexican grocery outlets carry them.Glad to have found Spices, Inc.

Delicious. First time customer with Spices Inc and first time trying these Pasillas de Oaxaca chiles. Very happy with both. While there are a lot of Mexican groceries around here in Western Colorado, and many of them carry fresh inventory of the most commonly used chiles (anchos and guajillos), it can be difficult to find others (moritas, pasillas negras etc) that have not sat around on the shelf for far too long, and I've never seen Oaxacan pasillas anywhere locally at all. All the chiles I ordered came promptly and were pliable and fragrant. Very happy with the quality. I've been using these to make roasted tomatillo salsa. (Roast 4 or 5 tomatillos in a skillet or under the broiler until blackened and soft, toast 3 or 4 chiles *briefly* in a hot skillet than soak in hot water for 20 minutes, then whizz up the tomatillos, chiles and about 4 garlic cloves in a blender with just enough chile soaking water to keep things moving. Add salt to taste and a little agave nectar if you want to knock off the tart edges just a bit and there you go!) The results have been superb. Lovely balance of smokiness, spiciness and tang. This stuff is wonderful. A bit dominant for eggs I'd say, but otherwise it works on anything. My only dilemma right now is to decide whether that salsa is sufficiently better made with the Oaxacan chiles than it is made with Moritas to justify the bigger price. The two versions are very similar. It's a tough call. I've made it with Mecos too, and it's damn good that way as well.
