Pasilla de Oaxaca Chile LOVE the smoky/meaty flavor that comes out when you cook with this. Great heat and flavor profiles. HIGHLY recommend!

Pasilla de Oaxaca Chile Both fresh and dried. these are an essential in my kitchen. i live 45 miles from mexico, and i can get just about any chile locally. however, getting pasilla de oaxaca locally is impossible. even online, they are extremely hard to find. spicesinc. is one of only two sources i've found. due to consistent problems getting them out of oaxaca, if you do find them, you never know if you will find them again. i buy a pound or more of these when available and ration them accordingly. yes, they are painfully expensive, but the flavor of these smoked chiles is sublime, and addictive. they should be toasted before use. here is a trick: the seeds, when toasted until black, then ground in a mortar and let to sit overnight to oxidize, will yield the smell and flavor of bacon.

Pasilla de Oaxaca Chile We don't find them spicy (even w/the seeds), but they make a taco salsa that is downright delicious.

Pasilla de Oaxaca chiles Oh, the smell! If they made it into an air freshener, I'd be first in line to buy it. :) Made a batch of chile sauce this week and it was magnificent. Only reason I didn't give a 5th star is that I noticed a few bugs in the chiles. I washed and cooked them thoroughly, but still, would prefer not to see critters in the first place.
