I typically don’t write reviews but after our recent delivery I cannot resist. We purchased these Chilies specifically for enchilada sauce. Usually the ones I find around town are teeny tiny and so old they crumble to a dust when touched. These from Spices were gigantic and the flesh/meat of the chili was fresh. They roasted well and after a quick boil turned into these beautiful, plump meaty chilies unlikes I’ve ever seen. Never made a better sauce- we also added some Mexican oregano that we purchased - WOW! Thank you!

Not that I'm very experienced with these things...
Just made a batch of adobo sauce for a barbacoa chicken attempt. The dried chilis were supple as they were supposed to be and had a depth of flavor that was interesting. I don't know anything about dried chilis, just getting into Mexican cooking, as there are no decent Mexican restaurants where I live in Nova Scotia. Web site is very well laid out and informative. The peppers I bought seem to be of excellent quality. Looking forward to new culinary adventures.
