Because Dendritic Salt crystals have a large surface area, this are a high-volume salt, and for the sake of accuracy it is better to measure Dendritic Salt by weight. If you must measure by volume, then start a recipe by using 3/4 the amount of Dendritic Salt as you would sea salt, and adjust as you go. This salt is engineered to enhance consistency and reduce segregation thanks to its structure, low density, blendability, and rapid solubility.
