Demerara Sugar (pronounced dem-uh-RARE-uh) is also known as bulk demerara sugar, demerara sugar bulk, and sugar in the raw.
Demerara Sugar gets its name from where it was originally grown in the colony of Demerara in South America, located in what we know today as Guyana. Derived directly from sugar cane, it moves through a hydraulic press which extracts cane juice and allows it to crystalize. These crystals are then harvested, retaining their natural brown color and crunchy texture.
More complex and interesting than traditional sugar cane, Demerara Sugar has been long used in European countries but is gaining popularity in the United States. It is popular with brewers and distillers, manufacturers of health and wellness products, cocktail mixes, and specialty soda, brewpubs, food trucks, cafes, bar and grill restaurants and those serving Argentinian fare, seasoning companies, and spice shops.
Flavor Profile
Demerara Sugar has a subtle molasses flavor with caramel undertones similar to toffee.
How to Use
Demerara Sugar adds unexpected flavor complexity. We recommend it for cakes, cookies and as a topping for crème brulee, French toast, oatmeal, and scones. For a warm and nostalgic fall treat, try it in our Pumpkin Muffins with Spiced Sugar, or counteract some heat by adding it to Sichuan Hot Sauce or our Jalapeño Cornbread. We also like to use it to caramelize grilled fruit like apricots, bananas, figs, and peaches, and it’s a great addition to our Easy Kimchi.
